Chicken and Strawberry Spinach Salad (06.16.14)

  • 2 tablespoons strawberry spreadable fruit
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, grated
  • 1/3 cup olive oil
  • 1 lb boneless skinless chicken breasts, bite-size pieces
  • 8 cups baby spinach
  • 1 cup strawberries, stems removed and strawberries cut in half
  • 1/4 small red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, chopped
  • Salt and Pepper, to taste

In a large serving bowl, whisk together the first 5 ingredients with salt and pepper. Add all remaining ingredients. Toss to coat. Serve immediately.
