Lemon Cream Berries (05.26.14)
- 4 ounces cream cheese, softened
- 3/4 cup vanilla yogurt
- 1 teaspoon honey
- 2 teaspoons freshly grated lemon zest
- 2 cups fresh blueberries, strawberries or blackberries, rinsed
- 20-24 vanilla wafers
Using a fork, break up cream cheese in a medium bowl. Drain off any liquid from the yogurt; add yogurt to the bowl along with honey. Using an electric mixer, beat at high speed until light and creamy. Stir in lemon zest.
If using strawberries, trim the cut berries into small pieces. In serving bowls or wine glasses, layer the berries with the lemon cream and vanilla wafers.
