Smoked Salmon Scramble (05.16.14)

  • 1 tablespoon butter
  • 8 eggs
  • 3 tablespoons heavy cream or half and half
  • 2 teaspoons chives
  • 4 slices whole grain bread, toasted
  • 1/2 lb. smoked salmon
  • Salt and Pepper, to taste

Heat the butter in a nonstick skillet over medium-high heat. In a bowl, whisk together the eggs, cream or half and half, chives, salt and pepper. Add to the pan; cook, stirring frequently, for 4-5 minutes or until the eggs have set up. To plate, place some of the salmon on each piece of toast. Top with the egg mixture. Serve immediately.
