Lemon Dill Salmon with Asparagus (02.13.14)

  • 1 tablespoon olive oil
  • 2 salmon fillets
  • 1 small bunch fresh dill
  • 1 large lemon, thinly sliced
  • 1/2 lb. asparagus
  • 1 teaspoon sesame seeds
  • No Salt Seasoning and Pepper, to taste

Preheat oven to 400 degrees F.

Brush the oil on both sides of the salmon fillets. Sprinkle no salt seasoning and pepper on both sides. Place salmon on a small baking dish. Place the lemon slices on top of the fillets, reserving a couple for the asparagus. Lay some of the dill sprigs over the lemon.

Bake until salmon is cooked through, about 12 to 15 minutes.

Bring a pot of water to a boil. Trim the ends of the asparagus spears. Cook in the boiling water for 3-4 minutes. Season with no salt seasoning. Squeeze the juice of the remaining lemon slices over the asparagus. Serve immediately with the salmon.
