Tuna and Pasta Salad (09.24.13)

  • One 1 lb. box bow tie pasta
  • 2 (5 ounce) cans tuna, packed in water, drained
  • 2 teaspoons olive oil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup parsley, chopped
  • 3 green onions, chopped
  • 1 finely grated carrot
  • 2 tomatoes, finely chopped
  • Salt and Pepper, to taste


Cook pasta according to package directions. Drain. Place in a large bowl.

Drain tuna, place in a small bowl and mash with a fork. Add olive oil, garlic and onion powder, parsley, onions and salt & pepper to taste. Blend well.

When pasta has completely cooled, add tuna mixture to pasta; add carrots and tomatoes to bowl. Mix well.
