Spinach, Corn and Goat Cheese Tacos (08.16.13)

  • 2 teaspoons olive oil
  • 1/2 onion, diced
  • 2 garlic cloves, diced
  • 1 cup corn
  • 1 teaspoon chili powder
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon cumin
  • 2 cups spinach
  • 4 ounces goat cheese
  • 6 corn tortillas
  • 12-14 basil leaves, torn or chopped
  • 2 green onions, diced
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • Salt and Pepper, to taste

In a large frying pan bring the oil up to medium to high heat. Add the onion and garlic; cook for 2-3 minutes. Add the corn, chili powder, red pepper flakes, salt and pepper. Stirring frequently, cook for another 1-2 minutes. Add spinach; sauté for another minute.

Warm the tortillas. Place some of the cheese in each one. Add some of the spinach and corn mixture. Top each with basil and green onions. Serve with salsa and sour cream.
