Tomato Avocado Salad (05.06.13)

  • 3 tomatoes, diced
  • 2 avocados, diced
  • 1/4 jicama, diced
  • 1 celery stalk, diced
  • 2 teaspoons red onion, finely diced
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon mustard
  • 1 small garlic clove, grated or finely diced
  • 1/4 cup olive oil
  • Salt and Pepper, taste

Combine the tomatoes, avocados, jicama, celery and onion in a large bowl. In a small bowl, combine the vinegar, honey or sugar, mustard, garlic, oil, salt and pepper. Mix well. Pour over salad and gently toss.
