Ice Cream Easter Treats
1 cup whipped cream, brought to room temperature
Food coloring, any colors
4 Casper’s Classics Ice Cream Bars, Strawberry, Sea Salt Caramel or Vanilla Bean
20-25 jelly beans
4 Peeps or edible Easter decoration
Place ¼ of the whipped cream on four small plates. Add in a few drops of the food coloring of your choice. Mix together with a spoon creating a design around the plate. Cut the ice cream bars into 4-5 slices, removing the stick. (Note: some of the chocolate coating will fall off; reserve.) Decorate the top with chocolate coating pieces, jelly beans and edible Easter decorations. Serve immediately.
Ice Cream Sandwich Caramel Treats
4 Fat Boys Ice Cream Sandwiches, chocolate chip or key lime pie flavor
1/3 cup caramel topping
1 cup whipped cream, softened
1 teaspoon sweetened cocoa powder
1/4 cup coconut, toasted
12-15 small marshmallows
1/4 cup white or chocolate chips
1/4 cup almonds or walnuts, chopped
4-8 cherries
Place the ice cream sandwiches on a platter. Heat caramel sauce in the microwave for 30 seconds on high. Drizzle over the sandwiches. Top with whipped cream, cocoa powder, coconut, marshmallows chips, nuts and cherries.
