- 6 slices whole wheat bread
- 3/4 cup egg substitute
- 1/3 cup fat-free milk
- 1/4 cup apple juice
- 1/2 teaspoon vanilla extract
- 2 tablespoons slivered almonds, toasted
- 1/4 cup apple butter
- 1/8 teaspoon ground cinnamon
- Cooking spray
Place bread in a 9-in. square baking dish that has been coated with cooking spray. In a large bowl, combine egg substitute, milk, apple juice and vanilla. Pour over bread and turn to coat. Cover and refrigerate for 2 hours or overnight.
Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted near the center comes out clean and the edges are golden brown. Sprinkle with almonds. Heat the apple butter and cinnamon in a small saucepan; serve with French toast.
Alternative cooking option: Coat the bread slices in the egg substitute, milk, apple juice and vanilla for 1-2 minutes. Spray a frying pan with cooking spray and bring up to a medium heat. Cook on each side for 4-5 minutes or until golden brown on each side. Heat the apple butter and cinnamon in a small saucepan; serve with French toast.
