- 15 fresh, ripe figs or dried figs, reconstituted
- 1/4 cup water
- 2 tablespoons fresh lemon juice
- 1 teaspoon brown sugar
- 2 teaspoons vanilla extract
- 8 pieces raisin bread
- 8 ounces brie cheese, sliced
- 1 apple, thinly sliced, any kind
- Cooking spray
Process the first 5 ingredients together in a food processor until the mixture is completely smooth. Spread the fig mixture on each piece of raisin bread. Top 4 slices with brie cheese, apple slices and other slice of bread.
In a skillet over low-medium heat, coat with cooking spray. Toast sandwiches on each side for 3-4 minutes until golden brown and cheese has melted. Cut into quarters. Serve immediately.
