Gingerbread Lady builds edible houses for charity

SALT LAKE CITY - One Utah woman is a master home builder. She says it's the imperfections and color that make her houses better...and of course it should be edible.

Every year Socorro Meredith, otherwise known as the Gingerbread Lady, spends hundreds of hours and thousands of dollars building gingerbread villages for charity.

Meredith was an accountant in Mexico. When she came to the United States 11 years ago, she resented the fact that she could only get a job in the kitchen.

At the time, the idea of building gingerbread houses as a profession was laughable, but Meredith believes life will slowly reveal your purpose.

"Most people say you think you have the American dream and I say yes I do," she said.

Meredith prefers making traditional gingerbread houses, but her themed houses - like the Hogwarts castle or miniature version of Intermountain Healthcare - get the most attention.

But Meredith says the attention doesn't matter. It's all about making people happy.

"I don't need money I don't need publicity. I don't need nothing. Just to see the faces. The love you can give to other. The happiness you can provide," she said.
