- 4 tomatoes, diced
- 2 cucumbers, seeded and diced
- 1/4 cup red wine vinegar
- 1/3 cup olive oil
- 1 teaspoon agave syrup or honey
- 8-10 basil leaves, torn or chopped
- Salt and Pepper, to taste
Combine tomatoes and cucumbers in a bowl. Mix vinegar, oil, agave syrup or honey with salt and pepper in a bowl. Pour over tomatoes and cucumbers; add basil. Mix well.
Note: Best flavor after chilling in the refrigerator for at least 30 minutes.
