- 8 tostadas
- 1 cup refried beans, warmed
- 4 cups cooked chicken, shredded
- 1 cup crumbled queso fresco, feta, cheddar or pepper jack cheese
- 1/2 cup sour cream
- Salt and Pepper, to taste
Spread the tostadas with the refried beans. Top with some of the chicken. Drizzle with sour cream, top with cheese and corn relish (recipe listed below).
Corn Relish
- 2 cups corn
- 1/2 bell pepper, any type
- 1/4 red onion, diced
- 1/2 serrano pepper, diced
- 1 lime, juice and zest
- 1/4 cup cilantro
- Salt and Pepper, to taste
Combine all the ingredients in a bowl. Chill for at least a couple hours for best flavor.
