- 1 ripe avocado, cut into strips (for garnish)
- ¼ C Jicama diced
- ¼ C Diced squash (zucchini and yellow)
- ¼ C Diced tomatos
- 1 T minced red onion
- ¼ C Chick peas rinsed and chopped
- 1 T Cilanro, rough chopped
- 1 t fresh oregano, minced
- Juice from 1 ime
- 2 T Olive oil
- ½ t Cumin
- Kosher Salt and Black Pepper to taste
Combine all ingredients (except avocados) in a mixing bowl and stir well to combine. Season with salt and pepper and place in center of serving plate. Arrange avocado sliced around and serve with tortilla chips.
