Asian Shrimp Sliders (02.08.12)

3 teaspoons canola oil1/3 cup flour1/4 teaspoon onion powder1/4 teaspoon paprika1/4 teaspoon thyme1/4 teaspoon cayenne pepper2 eggs, lightly beaten1 cup panko bread crumbs1/2 pound shrimp, washed and peeled2 tablespoons creamy peanut butter3 tablespoons soy sauce2 tablespoons hoisin sauce3 tablespoons hot water1 tablespoon chili garlic sauce or Sriracha sauce1 tablespoon sesame oil2 teaspoons olive oilSalt and Pepper to taste2 carrots, shredded or sliced2 green onions, diced8 small buns
Heat the canola oil in a frying pan to high heat. Set up as assembly line. Season the flour with the onion powder, paprika, thyme, cayenne pepper, salt and pepper. Place the eggs in a shallow bowl and bread crumbs on a plate. Working in batches, dip the shrimp into the flour, eggs, then the panko bread crumbs and place into the oil pan. Fry the shrimp for approximately 1 minute (adjust cooking time if using raw shrimp to add approximately another minute or two.)
In a bowl, heat the peanut butter in the microwave for 30 seconds. Add the next 6 ingredients and stir together; plus salt and pepper to taste. For each bun, place 3- 4 shrimp, 2 teaspoons of the sauce and a few of the carrots and green onions. Serve immediately.
