Veggies and Udon Noodle Stir Fry
1 (8 oz.) pkg. Udon noodles2 teaspoons canola oil2 cups cabbage, shredded1/2 cup carrots, sliced or shredded1/2 onion, thinly sliced2 tablespoon soy sauce1/4 cup cilantro2 green onions, dicedSalt and Pepper, to taste
Cook the noodles according to directions on package. In a frying pan up to a medium-high heat, add the oil. Sauté the cabbage, carrots, onion, salt and pepper for 4-5 minutes until slightly soft. Add the noodles and soy sauce. Sauté another 3-4 minutes. Pour into a large bowl. Add the cilantro, green onions and sesame seeds. Serve immediately.
