Sunny Hintze from Sunny Days Cakes shared her recipe for spice applesauce cupcakes!
Applesauce Spice Cupcakes:
1/2 cup sweet cream unsalted butter
2 cups brown sugar
1 tsp vanilla
2 1/4 cups of flour
2 tsp baking soda
3/4 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp cloves
2 cups unsweetened apple sauce
In a mixer fitted with a whisk attachment, cream the butter. Add the brown sugar and continue mixing. Add the eggs, 1 at a time, and vanilla, then mix until well blended and fluffy.
In a separate bowl, sift together the dry ingredients. Add to the creamed mixture alternately with the applesauce.
Whipped cream frosting
1/4 cup cold water
2 tsp unflavored gelatin
1 1/2 cup gelatin
1/4 cup powder sugar or to taste
1/2 tsp vanilla extract.
Have your bowl and wish cool. Place water in a small microwave-safe bowl. Sprinkle gelatin over water and allow to soften 5 minutes.
Dissolve gelatin by microwaving for 30 seconds, until gelatin is dissolved remove from microwave and let stand at room temperature for 1-minute gelatin must be liquid but not warm when added to cream.
Remove bowl and beaters from refrigerator and pour in cream, sugar, and vanilla extract. Beat together just until beater marks begin to show distinctly.
Add gelatin mixture to cream, pouring in a steady stream while beating constantly. Beat until stiff peaks form.
