Beef and Veggie Thai Salad

  • 2 limes, juice
  • 1 teaspoon chile garlic sauce
  • 2 tablespoons Asian fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons canola oil
  • 1/2 lb. steak strips, cooked
  • 1 cup thinly sliced peeled cucumber
  • 3 green onions, cut to 1” pieces
  • 2 celery stalks with leaves, chopped
  • 1 large tomato, chopped
  • 1/4 cup peanuts, crushed
  • Fresh Cilantro or Basil leaves for garnish (optional)

In a large serving bowl, whisk the lime juice, chile garlic sauce, fish sauce, sugar and oil together. Add the beef, cucumber, green onions celery and tomato. Toss together. Garnish with peanuts and cilantro or basil, if using. Serve immediately.
