- 2 cups chopped tomatoes or cherry tomatoes, halved
- 1 large cucumber, peeled, chopped
- 1/4 red onion, diced
- 6 oz. fresh mozzarella, shredded or cubed
- 3 tablespoon balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, minced
- 1 tablespoon honey
- 1/4 cup olive oil
- 10-12 fresh basil leaves, torn
- Salt and Pepper, to taste
In a large bowl, combine tomatoes, cucumber, onion, mozzarella, salt and pepper. In a small bowl, whisk together balsamic vinegar, mustard, garlic, honey, oil, salt and pepper. Pour over the tomato cucumber salad. Toss together with basil. Serve immediately.
