Asparagus and Almond Satay (03.21.16)

  • 1 tablespoon sesame oil
  • 1 lb. asparagus, trimmed, cut into 1′ pieces
  • 1/4 cup crunchy almond butter
  • 1/3 cup water
  • 2 tablespoons hoisin sauce
  • 1 tablespoon chili garlic sauce
  • 2 teaspoons low sodium soy sauce
  • 2 teaspoons fresh lime juice
  • Salt and Pepper, to taste

In a large skillet up to a medium high heat, add the oil. Saute the asparagus for 2-3 minutes. Whisk together almond butter, water, hoisin, chili garlic sauce, soy sauce and lime juice in a medium bowl until well blended. Add to pan. Cook for 3-4 minutes. Serve immediately.
