- 2 cups pancake mix
- 2/3 cup milk
- 2 eggs
- 2 tablespoons butter
- 1/2 cup maple syrup
Mix-Ins:
- Chocolate chips
- White chocolate chips
- Butterscotch chips
- Berries
- Mango, diced
- Bananas, thinly sliced
- Nuts
- Coconut
- Cooked bacon bits
- Cinnamon Sugar
- Dried fruit
Preheat oven to 350° F.
Mix together pancake mix, milk and eggs. Spray muffin tin with nonstick spray. (Note: You can use muffin liners.) Fill each one 2/3 of the way full. Add half to one tablespoon of desired mix-ins. Bake for 14-15 minutes or until a toothpick inserted comes out clean.
In a small saucepan, heat the butter and syrup. Drizzle over cooled muffins.
