Fettuccini Alfredo (Gluten and Dairy Free) (02.11.15)

  • 1/2 lb. gluten free fettuccini pasta
  • 2 teaspoons olive oil
  • 1 red bell pepper, chopped
  • 2 garlic cloves, diced
  • 2 cups water
  • 3/4 cup Vivian’s Live Again Alfredo Soup Mix
  • 3 tablespoons cilantro, chopped
  • 1 tomato, diced
  • 3 green onions, chopped
  • 6 dinner rolls, toasted
  • Shamy Garlic Butter

Cook pasta according to package directions.

In a large frying pan, bring the oil up to medium heat. Saute pepper and garlic with salt and pepper for 3-4 minutes.

Whisk water and soup mix together. Microwave for 1-2 minutes until thickened. Pour into pan. Add pasta. Heat for 3-4 minutes. Add cilantro, tomato and green onions. Serve immediately with rolls. Top each roll with desired amount of Shamy Garlic Butter.
