Recipe: Steak Sandwiches (01.14.15)

Steak Sandwiches with Au Jus Sauce

  • 2 teaspoons olive oil
  • 1/4 cup onion, diced
  • 2 cloves garlic, minced
  • 2 cups beef stock
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 2 teaspoons canola oil
  • 4 boneless sirloin steaks
  • 1/2 teaspoon steak seasoning
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 4 hoagie rolls
  • 8 slices provolone cheese
  • Salt and Pepper, to taste

Directions

  1. In a small saucepan, over medium heat, add the olive oil.
  2. Saute the onions and garlic for 3-4 minutes with salt and pepper.
  3. Deglaze the saucepan with the beef stock.
  4. Add Worcestershire sauce, thyme and bay leaf cook for another minute, stirring constantly.
  5. Reduce heat and simmer for about 10-15 minutes.  (Option: Strain the liquid through a fine mesh strainer and then return it to the saucepan until ready to serve or serve as is.)
  6. In a large frying pan, bring the canola oil up to high heat.
  7. Season the steaks with steak seasoning, onion and garlic powder, salt and pepper.
  8. Cook to desired doneness. Let rest on a cutting board for 5 minutes.
  9. Toast hoagie rolls with 2 pieces of provolone cheese.
  10. Thinly slice steaks. Place some of the steak strips in each hoagie. Cut in half.
  11. Serve with Au Jus Sauce.
