Apple Cranberry Slaw (09.17.13)

  • 1/2 cup plain Greek yogurt or sour cream
  • 3 tablespoons reduced-fat mayonnaise
  • 1 1/2 tablespoons white balsamic vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 cups unpeeled chopped Rome apple (about 1 medium)
  • 1 cup dried cranberries
  • 2 carrots, shredded
  • 1/2 head small purple or green cabbage, shredded

Combine the first 6 ingredients in a large bowl, stirring with a whisk. Add apple, cranberries, carrots and cabbage; toss to combine. Chill for at least two hours before serving for best flavor.
