Chicken wings
4 pounds chicken wings1/2 cup all-purpose flour1/2 teaspoon salt1/2 teaspoon pepper
Sauce
2 tablespoons butter3 cloves garlic–minced1 cup honey1 cup loosely packed brown sugar1 cup Franks hot sauce3 dashes Cholula sauce

Vegetable oil for frying
Mix the flour, salt, & pepper together in a shallow bowl or pan. Take each chicken wing and dredge in the flour until lightly coated. Place wings on a lightly sprayed baking sheet and bake in a 350 degree oven for 20-25 minutes. This will take care of the majority of the baking. After this point, the wings can be held over until closer to serving time.

While wings are baking, melt the butter in a medium sauce pot. Add the garlic and sauté for 1-2 minutes. Add the honey and let it melt a bit. Add the brown sugar and stir well. Add the Frank’s hot sauce and Cholula. Bring to a boil and then turn down to a simmer and let the sauce reduce and thicken.

When wings are baked and you are ready to serve, deep-fry the wings in 3 batches in oil that has been heated to 350 degrees for 4-5 minutes, just to finish off the cooking and to brown the outer skin/crust. Place wings in mixing bowl and toss with sauce.

Serve with bleu cheese dressing and any other wing accompaniments.
